Saved By A Pound…Of Ground Beef

We’ve all been there: Home after a long day of work, school, or just life – tired and NOT in the mood to cook. Sure, you could make eggs or mix up some tuna salad but sometimes you want something more.

Luckily, you threw a pound of ground meat (beef, turkey, pork, chicken, lamb, or whatever else you had on hand!) into the fridge in the morning to defrost. All that’s missing is a quick and easy way to use it!

Here are our favorite ways that a pound of ground meat can save your dinner:

  • Egg Roll in a Bowl Our favorite version of this Whole 30 staple is this version by 40 Aprons. The sautéed red onion and the spicy mayo really bring it over the top!

  • Hamburger Soup Get out that Instant Pot and whip up some hamburger soup. This recipe has won rave reviews from members of our Facebook group!

  • Beef Stir Fry This easy beef stir fry from The Defined Dish is delicious and comes together in no time! It’s great served over cauliflower rice or roasted potatoes you may have meal prepped in advance.

  • Picadillo – T

    his Cuban dish is sure to be a winner for dinner, and the leftovers work well for lunch the next day! Check out this Instant Pot recipe from Skinny Taste!

  • Meatballs – If you happen to have some extra ground meat on hand (the recipe calls for 2lbs of pork and 1lb of beef), these meatballs from Noshtastic are amazing and so easy! Also, we love this version of oven baked meatballs from Jay’s Baking Me Crazy, which calls for 2lbs total of meat. And this easy recipe for buffalo chicken meatballs is great if you have ground chicken on hand – it’s quick and delicious!

  • Sloppy Joe Bowls – This recipe from Physical Kitchness is a crowd pleaser! Forget about the sloppy joe sandwiches of your childhood and give this one a try!

Just feeling like winging it? Here are some other ideas for ground meat from members of our Whole 30 Facebook group:

  • Make burgers! Wrap them in leaf lettuce, top with a thick tomato slice, compliant mayo, compliant ketchup, and mustard, serve with a pickle on the side.

  • Dish up some unstuffed cabbage roll! Mix beef, cabbage, a can each of diced tomatoes and tomato sauce, onion and peppers – or just throw in a bag of Trader Joe’s fire roasted onions and peppers. Mix, season, and eat!

  • Mix up some ground meat and broccoli! Brown ground meat with either broccoli slow or broccoli florets – whatever you have on hand. Throw in some green onions, freshly grated ginger, coconut aminos, and a little rice vinegar. Dinner is served!

  • Make your own taco meat. Mix turkey meat with green chiles, garlic, onion, and homemade taco seasoning. Eat it throughout the week in frittatas, scrambles, romaine lettuce cups, taco salad, and more.

  • Love on some lamb. Cook up some ground lamb in ghee along with onions, pre-roasted potato chunks, and lots of spices including parsley, onion powder, garlic powder, salt and pepper.

  • Think marinara! Take a pound of ground meat and sauté in pan with chopped mushrooms, baby spinach and olive oil. When it’s cooked through, add compliant tomato sauce and serve over zoodles. Add some nutritional yeast – and you’re good to go!
