Whole30 Sweet Potato Skillet Recipe

Hi everyone! It’s Dominique from @charlestonfitfoodie in Charleston, South Carolina. I have completed 5 rounds of Whole30 and learn more and more each round. I was a winner of The New Primal Whole30 scholarship and I am a newly certified Whole30 Coach. I am eager to share my knowledge and experiences with other Whole30-ers out there!

I am so excited to share my favorite Whole30 meal with you guys! I make this quick and easy Sweet Potato Skillet at least once a week. It is perfect for breakfast, lunch, dinner or brunch. It’s delicious as is or you can customize it by adding vegetables or sauces as you prefer. I hope you enjoy it as much as I do!

  • 2 Tbs avocado oil

  • 2 medium sweet potatoes (spiralized already if you don’t have a spiralizer)

  • 3 chicken apple sausage links

  • 3 cups spinach

  • 2 eggs

  • TJ’s everything but the bagel seasoning

  1. Spiralize sweet potatoes.

  2. Heat iron skillet on medium heat with avocado oil.

  3. Add sweet potatoes and cook on medium heat, mixing every 2-3 minutes to prevent burning.

  4. When sweet potatoes are cooked down and soft, add chicken sausage and cook for 2-3 minutes until brown.

  5. Add spinach and cook until wilted.

  6. Turn heat to low and add eggs on top.

  7. Cover skillet to allow eggs to cook through.

  8. Let cool and then top with seasoning.

  9. Enjoy!
